Notes – I tried the zucchini (cheese replacer) sautéed in slices and then added to the pizza, but the zucchini carries so much moisture that it kind of made the crust soggy where it sat. So I highly recommend if you are subbing cheese with zucchini that you shred it and add it on right before you eat.
Allergy-Free Paleo Pizza Ingredients: 1 Allergy-Free Pizza Crust 1-2 T Seasoned "Butter" Sauce 1/2 c cooked chicken- diced 1/2 zucchini- shredded 3 pieces of nitrate free bacon- cooked 1/2 cup organic tomato sauce 1 cup fresh spinach leaves coconut oil for sautéing Instructions: Preheat oven to 350 Prep and cook crust. While crust is cooking: Wash and saute your shredded zucchini(cheese) using coconut oil, and then set aside. Using the same pan you cooked your "cheese" in, cook bacon until almost crispy. We had left over chicken in the fridge, so i just pulled it out and using kitchen scissors cut it into small pieces. Rinse and drain spinach leaves. When crust is ready for toppings: Dot the seasoned "butter" sauce around crust and then pour tomato sauce over top and spread with back of spoon. Add your meats. Cook 8-10 minutes. Remove from oven and add spinach and "cheese". -If you would like, you can put pizza back in oven for a few minutes to wilt spinach. Remove from oven again, ENJOY!
