Roasted Acorn Squash

Gluten, Dairy, Egg, Nut, Soy & Refined Sugar Free!

I am used to raves about spaghetti squash and all its’ fabulousness, but this sister squash is also another winner in my book!

Let me introduce you- if you haven’t been introduced yet- to Acorn Squash.

What a yummy side dish when you want something versatile and easy! You can season this mild flavored squash either sweet or savory. – Or you could do what I did and season one half savory and the other half sweet! 😉 – Simple, allergy free, REAL food! I love it!  It is also budget friendly for your primal kitchen! {This puppy was only $.69!!}

Roasted Acorn Squash
Preheat oven to 400

1 acorn squash
coconut oil
100 % pure maple syrup (optional)


Wash and halve squash from stem to stem.
Scoop out seeds.
Score inside of squash about 5 times from side to side.
Place face up in a shallow baking dish with 1/4 in water.
Brush with melted oil, maple, and sprinkle with cinnamon.Bake for
45-55 or until soft. Serve!
