Acorn Squash Dip

Gluten, Dairy, Egg, Nut, Soy & Refined Sugar Free!

Acorn Squash Dip
Preheat oven to 400

1 acorn squash
coconut oil- or oil of choice-
garlic powder
1/3- 1/2 c filtered water -depending on how thick you like dip
1/2 T EVOO
1/4 t fresh minced garlic- even better if it is roasted!
1/4 t ground black pepper
1/4 t coriander
1/4 t cumin
dash of salt and cayenne 

Instructions:

Wash squash and half from stem to stem.
Spoon out seeds.
Score (slice) inside of squash about 5 times from side to side.
Brush with melted coconut oil, and sprinkle sparingly with garlic 
powder.

Bake for 45-55 minutes until squash is soft- bake face up in a 
shallow baking dish with 1/4 inch water.

Once squash is baked and cooled, scoop out insides and put them,
along with the rest of your ingredients into a blender and mix-
slowly adding in water until desired constancy is reached.

I serve this with pan-fried sausages (any kind would work), homemade chicken wings, veggies, veggie chips and/or homemade crackers! It is even yummy thinned out and used on mexican foods!!
