Cauliflower Rice

Ok, so I was probably thinking the same thing you are thinking right now… How on earth do you replace rice with a veggie?! Well folks, it has been done. Of course nothing will taste exactly like brown rice other than brown rice, but this is a great grain replacer for those who have issues digesting rice {and/or gluten}, love the concept of a better carb meal, or just simply enjoy trying new foods! This was my first attempt at “Cauliflower Rice” and I am happy to announce that it is kid and husband approved! I will try a few other variations too because this is definitely a recipe that can be played with a bit! 🙂

Cauliflower Rice

Ingredients:

1 head of cauliflower or a bag of frozen cauliflower florets

one small onion

cooking oil

pepper

garlic powder

sea salt

Instructions:

-preheat oven to 375

-rinse cauliflower– if you’re using frozen then rinse to thaw

before cooking

-cut florets off stem

-chop cauliflower florets until they are the consistency of rice– some people use a food processor– I did not because mine kept making my cauliflower mushy and that is not the idea I had in mind

-dice onion

-lay “rice” and onion out on a baking sheet

-drizzle with enough oil to lightly coat and then sprinkle with seasons

-using a spatula mix around and then spread on pan to form a thin layer

-cook for ten minutes. stir around

-cook for another 10-15 minutes {depending on the heat of your oven and what consistency you want your “rice” to be} stirring every 5 minutes so you don’t burn it

-remove from oven and ENJOY!
