Sweet Potato & Cinnamon Stew

No Nuts, Eggs, Dairy, Gluten, Grains, Soy or Refined Sugar!

Hey friends 🙂 I am sharing our {what seems to be} every Sunday stew and I promise that once you make this once it will become a weekly meal at your house too! If not then don’t be surprised if I am knocking at your door checking to see if you are human!

Sweet Potato Cinnamon Stew

 

2 lbs cubed stew meat
3 organic sweet potatoes peeled, cubed
1 onion chopped (red if you have it)
3 t garlic minced
2- 28oz cans organic stewed tomatoes diced
2 cinnamon sticks
2 bay leaves
Garlic powder
Pepper
water

Pre-heat oven to 350.

In a large dutch oven, sear the meat (not all the way cooked) in some cooking fat or coconut oil. Add a little garlic powder and pepper to the meat while its cooking. You could even add your onions too so the flavor gets in with the meat!

Once the meat is browned turn heat off. Add your cubed sweet potatoes, tomatoes, garlic, and one can full of water. Stir to evenly distribute all your ingredients.

Then to finish up, add your cinnamon sticks and bay leaves. I like to make sure they are in the liquid so the flavor really soaks up!

Place lid on dutch oven and set into preheated oven. Let cook for 2.5 hrs or until meat is tender.
